It’s National Raspberry Cake Day, so why not start off the day with a trip to a local Pick-Your-Own. Fill up a carton or two, then head home and start baking! An easy idea: Bake chocolate cupcakes. Meanwhile, Puree 1 cup raspberry, then whip together 8 ounces of cream cheese (use low-fat for a healthier version) with 1 cup sugar and 4 tsp. raspberry puree. When cupcakes are cooled, frost with puree. Drizzle the leftover puree on the plate.
